One-Pot Veg Khichdi (Comfort Food)
📝 Ingredients (Serves 2):
Rice – 1/2 cup
Yellow moong dal – 1/4 cup
Mixed vegetables – 1 cup (carrot, peas, beans, potato)
Ghee or oil – 1 tbsp
Cumin seeds – 1/2 tsp
Ginger – 1/2 inch (grated)
Turmeric – 1/4 tsp
Hing (asafoetida) – a pinch (optional)
Salt – to taste
Water – 3 cups (for soft consistency)
🔪 Preparation:
Wash and soak rice + dal together for 15–20 minutes.
Chop vegetables finely.
🍳 Cooking Steps:
Heat ghee/oil in the pressure cooker.
Add cumin seeds. Once they splutter, add hing and grated ginger.
Add vegetables and sauté for 2–3 minutes.
Add soaked rice-dal mixture. Mix everything well.
Add turmeric and salt. Pour in 3 cups water.
Close the lid and pressure cook on medium flame for 2 whistles.
Let the pressure release naturally. Open lid, stir and adjust consistency if needed (add hot water if too thick).
✅ Tips:
Add a dollop of ghee on top before serving.
Serve with curd, papad, or pickle
